Beefeaters Salad
FOR THE SALAD:
- Romaine lettuce (both red and green)
- Butter crunch or similar loose head lettuce
- leaf lettuce (both red and green)
FOR THE TOPPING:
- Small new potatoes (cooked with skins on)
- radishes
- green onions (chopped)
- cherry tomatoes
- green pepper slices
- fresh green beans (steamed/crisp)
- strips of cooked steak or roast beef
FOR THE DRESSING:
- 1/4 c bottled horseradish
- 3/4 c mayonaise
- 3/4 c sour cream
- 1 Tbsp lemon juice
- 2 tsp Worcestershire sauce
- 1/4 tsp coarsely ground pepper
Mix all dressing ingredients and chill. Chop or tear lettuce and place on platter
or in bowls. Top with any or all of the toppings. Serve dressing on the side.
(You may drizzle some dressing over the toppings if desired.)
Note: You may add water to thin dressing to the desired consistency.
