Spicy Salsa
Use your own judgement for
quantities, then throw everything together and serve with plenty of tortilla chips. Makes
a great party appetizer.
- Italian plum tomatoes--chopped and seeded. (You may use regular tomatoes but the salsa
will be much jucier.)
- Chopped onion
- Chopped green pepper
- Chopped baby zucchini (optional)
- Minced garlic (one or two cloves, optional)
Sprinkle vegetables with salt, cumin, chipotle ground red pepper, and epazote
seasoning. Stir to mix and put in colander to drain off some of the juice. (Save the juice
and add to your next batch of taco meat or chili.)
Add enough bottled chunky salsa (any flavor) and Ortega brand smooth taco sauce to the
vegetable mixture to make it look nice and thick. Stir in some minced parsley to add
color. Adjust seasoning to taste. Will keep for a day or two in refrigerator, but don't
expect much to be left over!
