Zucchini
- 3 T olive oil
- 2 med size zucchini, 1 yellow, 1
green
- 2 med onions
- 3 cloves garlic
- fresh mushrooms, sliced
- salt, pepper, oregano, basil (to
taste)
- 8 oz. Tomato sauce
- Mozzarella cheese
Sauté zucchini,
onions, garlic and mushrooms until tender. Add 8 oz. Tomato sauce.
Continue to cook about 5 more minutes. Melt Mozzarella cheese on top.
Serve by itself or over pasta.
