Allona's Summer Pasta

  • olive oil
  • 1 large or several small eggplants, not peeled
  • 2 purple onions
  • 3 tomatoes
  • 4 cloves garlic
  • large bunch of basil
  • salt and pepper
  • cooked pasta

Cover bottom of a large skillet with olive oil.  Turn heat to high.  When hot, sauté bite size chunks of eggplant & purple onions to caramelize, about 5 minutes.

Turn off or remove from heat and stir in chopped tomatoes, minced garlic and small torn pieces of basil.

Stir in cooked angel hair pasta (or other pasta of your choice) with some of the cooking liquid.

Top with fresh parmesan or romano cheese.
